A week of change and beauty

This week I received 2 jobs that will help my family out. I know God is responsible. I will also be starting a new exercise routine and program this coming week called the Fighter Diet that I will be blogging about! I will have to change how I eat and drink and think about food! It will no doubt be a challenge. I am ready! Life will never be the same! More this weekend to come.

A new beginning is scary

Sooo a new beginning is scary. Do we embrace it? Run from the inevitable? Make excuses? Find joy in the action of change? I have experienced all of these lately. I want to make a fresh start for me. I am talking about changing my lifestyle. I am still happily married so this is not a change I am referring to. Rather the change I wish to embrace is selfish, all for me. My goals are intertwined here. I want to become healthier and quite frankly leaner and fit. I have let sadness in the last few months help pack on pounds and as far as exercise.. I gave up my routine:(. So with the cutting of my hair and the mark of this day I am starting a journey to a new me. Here are my goals:
Drink 1 gal of water a day
Workout 6 days a week
Loose the pounds and lean out and tone up.
Run a half marathon

I have more but to not psyche myself out I will start with these!
Well I am off to start the day! What are your dreams and goals for you?

I was spoiled !!!

I was spoiled by my new vegan swap friend. Her name is Elsa from Cali, she is great! I love all they yummy treats she sent me. They were literally all favorites. I can't say one was better than the other. I am a huge tea fan and she sent a delicious Yogi tea I have never tried. Rice and beans chips that made me wish I had a trader joes nearby! Rice rolls that were like a dessert I ate for breakfast this morning. Yummy! I can't leave out the gluten free pumpkin chip cookies! Hands down a real treat. I almost never get cookies and I've never tasted ones this good before. You can see in the picture that the package is empty. I want to mention that there was also an apple pie larabar I ate before taking pictures! Also Elsa didn't know this but I love ginger so she really did spoil this veganmama! Cutting my hair off for love

I have decided to cut all my hair off an donate to Wigs for kids. I have lost so many love ones to Cancer. It feels like the right thing to do and I just can't quite decide on a style cut for myself. I also have decided to start a journey of healing. I did a juice reboot for 15 days and felt amazing. After when I went back to regular eating habits I felt ill. I have Celiacs and I need to get my health under control. No more migraines, sore joints, stomach cramps and more bad bad stomach issues. I want to feel amazing and on top of the world again. The best Gluten Free veggie sandwich

I just made the best gluten free veggie sandwich I had in a long time!! The roasted red pepper tapenade I found at my local health food store made it off the charts. I think when you combine the smoky flavor of the tapenade and the creaminess of the avocado with the fresh tomato from the garden..... Ummm so delicious. I just finished a 15 day juice reboot and my taste buds are enhanced and sweets don't appeal to me. Here is how I made it.
2 slices of your favorite vegan Gluten free bread
Half of a ripe avocado
Roasted red pepper tapenade
Spinach leaves
2 slices of tomato ( garden fresh is best)
Salt and pepper to taste.
I put the tapenade on one side of the bread then spinach on top then tomatoes on top salt and pepper and the other slice of bread you guessed it creamy avocado. Put it together and enjoy! I will shortly post pics of my summer canning so far!

Hi! I'm back!

Hey all!  I am back!  I have started a new part of my life.  I am running a produce business!!  I am also managing our local farmers market and loving it.  I have been around,  just crazy busy. So a quick update.  I am still a Vegan Mama and still trying to encourage my family to be healthier.  I can't say I am successful all the time but at least I haven't given up.  I have given in a bit to much though.  Ugh oh well.  Perfection is overrated.  I am really excited I have fresh produce in the garden to eat and juice and this is my favorite time of the year.  I actually have to make this post short because I am about to make blueberry jam.  The blueberries are so delicious I figured jam would be perfect.  I will post pictures when I am finished!

Trying something New!

I am trying something new!  Firstly I have tried to have my kids eat vegetarian almost 6days a week and I also and trying to make as much of their food as I can.  I know everyone says 21days to a new habit.  I have actually been making vegetarian about 60% of the time for them so this won't be to much of a stretch.  My biggest concern is just sticking with a routine. You would think by October I would have a school routine down but I don't.  I still working at it.  Making most of their food from scratch has proved a little tougher than I first thought.  Its so easy to run out and grab a pack of cookies or snacks.  The modern grocery store is a blessing and curse.  Great for Moms who need to just run in and get it and be done. However a mother like myself that wants her kids to eat as much as they can wholesome and not full of artificial ingredients. It proves to be harder especially since I live nowhere near a Wholefoods or Health food store.  Its a more time consuming task I have taken on.  Its completely worth it when there bodies are healthier and they will grow up to be healthier too.  They sneak artificial flavoring and artificial sugars in alot of foods targeted to kids too.  Its awful that they are doing this.  Kids need wholesome foods closest to how they grew as possible.  I mean really blue cereal.  Wheat doesn't grow blue and fruit snack blue, purple, and bright green.  Not natural!!  Seriously between the dies fillers and artificial flavors and artificial sweeteners what is this doing to our kids and ourselves???  I will tell you we are filling our kids with toxins and unnatural ingredients.  This is going to hurt there growing bodies in the long run.  So this Mama is going to make a change for her kids and for her family.  I hope you will join me in changing what we eat and how we feed our families.
